SUGAR SHACK
Spring is coming, February goes,
It’s maple sugar time,
Boil the sap, make the syrup,
It really is sublime.
Boil it more, the syrup’s thicker,
So yummy and so sweet,

So wonderful to eat!

SUGARBUSH FARM
Coming to the farm in March in sugaring time, carrying the pails of sap, sixteen-quart buckets, dangling from each end of a wooden yoke that lay across the shoulders, and emptying them into a vat in the saphouse where fire burned day and night for a week, and horse and wagons carrying tanks of the nectar to the sugar shack here on the Sugrabush Farm.

TAPPING THE MAPLES
Cans hang from the trees, a horse harness jingles in the woods, the gathering of the spring syrup has begun. The smell of pleasant sweetness wafts through the air. A fire is roaring, boiling the sap fresh from the maples while grey, wispy smoke billows towards the sky. The annual harvest is underway at the Sugar Shack.
